Pronounced as one letter,
And written with three,
Two letters there are,
And two only in me.
I’m double, I’m single,
I’m black, blue, and gray,
I’m read from both ends,
And the same either way.

I’m not sure if that works because is a ewe both singular and plural and do they come in colors like brown, blue and grey? I was looking for “eye”.

the single/double line got me–double u but only one and single e but there are 2. ewe isn’t plural. the color may be a matter of opinion–a blue dog is silvery gray. sheep come in a huge range of colors.
