Scott or “Scottie” as he goes by on Instagram caught my attention with one of his more political creations from this past week. He was clearly inspired by Anderson Cooper’s description of Donald Trump when he said, “That is the president of the United States. That is the most powerful person in the world. We see him like an obese turtle on his back flailing in the hot sun, realizing his time is over.”

A steep drop in MBTA ridership attributed to the pandemic and rising unemployment combined with the need for state budget cuts has resulted in some pretty scary proposed cuts that include halting all ferry service, eliminating a half-dozen commuter rail stops as well as stopping weekend service, cutting 25 bus routes and decreasing subway frequencies.
As a result of the decline in ridership that is similarly impacting transit agencies across the country, the MBTA is now only transporting 330,000 trips on an average weekday – but is continuing to run the same high levels of service as it ran to serve 1.26 million daily trips prior to the pandemic, an unsustainable level of service delivery.
Ferry service is currently running at 12% of pre-pandemic levels. Commuter rail service is essentially the same running at 13% of pre-pandemic levels. Subway and bus service are faring better but also have seen steep drop offs in ridership so the MBTA is proposing fewer trains and ending service at 12 Midnight. Approximately 25 bus routes appear to be on the chopping block. You can see what the MBTA has proposed for changes in bus service, here.
Some of the cuts to the commuter rail and ferry could be phased in as soon as January, but the changes to rapid transit and bus service would not be expected until the spring of 2021.

This is an easy, affordable and versatile dish that takes about 15 minutes to prepare and 30 minutes to cook. You can add a protein like chicken if you want, but the ingredients can vary to suit whatever is in your refrigerator. Just be mindful to start with the ingredients that take the longest to cook.
Step 1: Pull out whatever you would like to include in this vegetable mélange and chop into bite size pieces. You will also need: 1 tablespoon of butter, some vegetable or chicken broth (water or even a lager or ale works too), salt and pepper and of course a curry. I use Spur Tree Jamaican curry.
Step 2: Over medium heat add 1 tablespoon of butter and let it melt. Add 1 chopped onion and 2 healthy tablespoons of curry. Let this cook for a couple of minutes then add the thicker vegetables (see below) I used 1 cauliflower, 2 carrots, a half cup of walnuts and 4-6 small, whole garlic cloves. Add salt and cover for approximately 15 minutes (stirring occassionally).
Step 3: Add 1/3 of a cup of broth and stir to ensure nothing is sticking to the bottom of the pan then add the lighter vegetables. I used a red and green bell pepper, 8-10 baby bella mushrooms, and 2 celery stalks. Add fresh ground pepper and cover for another 5-10 minutes. If you want to increase the curry flavoring also add a final tablespoon at this point and stir.
Step 4: Turn off heat and leave uncovered for 5 minutes to cool before serving.
Cooking tip: This is great on its own, but I like to serve this over rice. This meal makes for excellent leftovers, tasting even better the next day.

One of my fondest and most memorable trips was backpacking through Europe after I graduated from college in the early 1990s. The trip was my first time traveling abroad, and I remember thinking of it as a grand adventure. I had no idea what to expect but the trip exceeded my wildest dreams and gave me the travel bug.
My parents took this photo of me at Boston’s Logan Airport just before I boarded my flight. When I look at this photo of 22 year old me, I can’t help but smile and think about how amazing that trip was and how much I learned. Although I absolutely fell in love with Europe and traveling, I wouldn’t travel abroad again until I met Sergio in my late 20s. Sergio’s love of travel was one of the reasons we initially connected. When I met him he worked for United Airlines which allowed us to travel frequently.
Sadly, we’ve not been back to Europe since 2016 when we visited Portugal but hopefully we can rectify that soon after this pandemic.
