No Pants Subway Ride hits the MBTA

No Pants Subway Ride 2014Today the No Pants Subway Ride is happening around the world so don’t be shocked if you see some people without their pants on the MBTA this afternoon.  I look forward to this event each year, but I’ve opted to keep my pants on and sit this one out while I wait for Sergio to return from caring for his father in Brazil. I hope we can rejoin all the fun in 2015.  Below I’ve included some photos from previous years.

BosGuy’s wicked awesome tomato sauce

Tomato SauceI regularly make a pot of tomato sauce that I use through out the week.  While one can buy jarred sauce, I prefer making my own because I believe it tastes much better and I also believe that it is far healthier.  The  total cost for making my red sauce costs approximately $9-$10 and will make 6-8 servings.  Total time prepping and making the sauce varies because you can let this simmer for hours if you like, but when in a pinch this can be done in 45 minutes to 1 hour.

Ingredients for BosGuy’s wicked awesome tomato sauce includes: 2 28oz cans of San Marzano tomatoes (I prefer the whole peeled or cubed variety), 1 Vidalia onion, 1 head of garlic (roasted), 1 bell pepper (roasted), 1 carrot, 1 spicy Italian sausage, 1 cup of red wine, curly parsley, olive oil, Italian seasoning, salt and pepper.

I start by pureeing the onion and carrot in my Cuisinart because they will cook more quickly then I add them to a hot pan with olive oil.  The carrot acts as a natural sweetener and will cut the acidity of the tomatoes when they are added.  This is a healthier option than sugar commonly found in jarred sauces.  

After the onions and carrots cook (it will only take a couple minutes) I combine the whole peeled tomatoes, roasted garlic and peppers and pulse them in my Cuisinart so there remains some chunks. Then I add it to the sauce pan and stir (repeatedly).  Next, I peel off the casing of the sausage and remove any large pieces of fat.  I add this along with the parsley and one cup of red wine into my blender to puree it until it looks like a paste (it looks gross but adds so much flavor). Add the contents to the sauce pan and stir (repeatedly).

Lastly, cover the sauce pan and lower the heat so the sauce will lightly simmer.  Let it cook for a minimum of 30 minutes (stir every 5-10 minutes).  If the sauce becomes too thick add another cup of red wine  / chicken stock / or water.BosGuy cookingIf you would prefer a meatless option I suggest substituting the sausage with a roasted eggplant.  Fortunately for you I have a past post that shows you how easy this is to do, BosGuy cooks: Roasted eggplant.

Other Tips: purchase San Marzano tomatoes – I know they can be a bit more money but they taste better.  The red wine will add both flavor and deepen the color of the sauce, making it more visually appealing.

Sochi Olympics: The missing link

Sochi OlympicsDid you know that Russia is the only world power right now actively encouraging discrimination and hatred against the LGBT Community?

Did you also know that the IOC has in their charter and mission that they are committed to “To act against any form of discrimination affecting the Olympic Movement.” Discriminatory laws enacted in Russia affect the Olympic Movement and participating gay Olympic Athletes but that seems to be an inconvenient truth for the IOC so they’ve pretended not to notice, but I have and it has really ticked me off.  I’ve ranted about it here, here, and here.

Later today the US Olympic Committee’s road to Sochi Tour comes to the Boston Common Frog Pond skating rink from 11am-5pm so I thought I’d share some information about The Missing Link.  It is a campaign focused on raising money to go to Immigration Equality’s Russia Emergency Fund. Over the coming weeks, I’m sure I’ll post a few more rants about my disappointment in the I.O.C. I’m curious how you feel about this?

US Government will recognize Utah’s same sex marriages

Utah Same Sex MarriagesOn Wednesday this week Utah Gov. Gary Herbert’s office announced the state will not recognize same-sex marriages performed in Utah since last month.  In possibly the best F.U. I’ve seen in recent memory, today the U.S. Attorney General Eric Holder said the United States federal government WILL recognize those marriages.

“I am confirming today that, for purposes of federal law, these marriages will be recognized as lawful and considered eligible for all relevant federal benefits on the same terms as other same-sex marriages,” U.S. Attorney General Eric Holder.

Think elections don’t matter? I doubt a President Romney administration would have supported those LGBT couples.

Check Governor Herbert – now it is your turn and historians are recording your every move.

While I was doing some post holiday house cleaning I stumbled upon a poem I wrote years ago. I actually forgot I wrote this until after I read it.  I’ll never be a poet, but I do love poetry and dabble in it from time to time.  When I write, it tends to be fairly obvious and less articulate, but that can also make it more relatable I suppose.  I’m fairly certain this haiku I wrote summarizes situations that everyone has experienced before.
