BosGuy cooks: Fancy avocado & toast

My trainer has been encouraging me to eat healthier. I have a fairly healthy diet but there is room to impove, and this is one breakfast I make regularly that gets two thumbs up from him so I thought I’d share it since it is easy to make and always delicious. Avocado & toast is a popular breakfast in the US, but everyone does it a bit differently. This is avocado & toast à la BosGuy.

Ingredients required: 1 ripe avocado, fresh whole wheat bread (or whatever is your preference), 2 eggs, tomato, butter, salt and pepper. For best results, the avocado and tomato should be room temperature.

Start by adding butter to the frying pan to prevent the eggs from sticking. Butter seems to work better, but using oil is a bit of a healthier option. Fry the eggs over medium heat and toast the bread. While the toast is toasting and the eggs are fryn’, open the avocado, remove the pit and set aside. Then cut four thin slices from a ripe tomato. When the toast is ready, scoop out the avocado and with your fork and use its tines to mash so it completely covers your toast and then add the tomato. Sparingly sprinkle salt and pepper on both avocado and tomato so everything is seasoned. Then take your eggs out of the pan and place them atop the avocado and tomato (season again as you like – I add fresh dill, salt and pepper) and serve as an open-faced sandwich.

Hints / Tips: I like to wait a minute or two before eating because if the tomatos are sliced thinly the butter and warmth of the egg will slightly soften and cook the tomato. I cook eggs so they will be very runny and the yolk will mix with the avocado, tomato and crunch of the toast so napkins are a must. A strong cup of fresh brewed coffee is the perfect accompanyment.

2021 Boston Pride postponed

Boston Pride and the City of Boston announced today that the Boston Pride Parade and Festival will not be held in June but may be rescheduled for later this fall similar to other large annual events like the Boston Marathon. The reason for the postponement is due to the ongoing state of emergency from the coronavirus pandemic. Large gatherings in the state have been banned until Massachusetts moves into Phase 4. 

Boston Pride also announced that it will be developing a series of virtual events in June to commemorate Pride Month and the 50th anniversary of Boston Pride.  Virtual events being planned for June include the Pride Flag Raising at City Hall Plaza and the Pride Lights ceremony to honor all those lost to and affected by HIV/AIDS. More information on these events will be available in the coming weeks.

Stopping by Woods on a Snowy Evening

For the past few years, each winter I share this poem by American poet, Robert Frost. The poem was written ninety-nine years ago while living in Vermont back in 1922 and it was published a year later in Frost’s New Hampshire volume. The book earned Frost the Pulitzer Prize for Poetry in 1924. One of the reasons I love Frost is because his poetry is so accessible but at the same time he elevates the experience through his use of words, rhythm and symoblism.

Above is a photo Sergio took when we were walking to my parent’s house at Lake Winnipesaukee. It was dusk and the snow was still falling. It felt like we were the only ones around. The photo is a favorite of mine and reminds me of this poem. We are only missing a horse, harness and bells.

STOPPING BY WOODS ON A SNOWY EVENING

Whose woods these are I think I know.
His house is in the village, though;
He will not see me stopping here
To watch his woods fill up with snow.

My little horse must think it queer
To stop without a farmhouse near
Between the woods and frozen lake
The darkest evening of the year.

He gives his harness bells a shake
To ask if there is some mistake.
The only other sound’s the sweep
Of easy wind and downy flake.

The woods are lovely, dark, and deep,
But I have promises to keep,
And miles to go before I sleep,

Vintage gay

Much thanks to Arnon who shared this photo and note on the reverse-side. His father is shown above on the right. Arnon shared his family history and the relationship of these two men, which is quite tender and personal. The inscription on the flip side of the photograph shows the date of October 23, 1943. For historical reference this photo was taken in Europe during WWII; weeks after Italy surrendered to the Allied Forces. However, fighting would continue to rage in Europe until May 8, 1945. It makes me wonder what these men were forced to endure – fortunately both survived the war.

I dedicate this weekly post, featuring vintage gay photographs, to the men and women who lived in a more critical time where being true to yourself and loving who you want wasn’t always an option and came at a great price. Can you feel the heat down under

I don’t know what is happening with professional tennis but if you have been watching the Australian Open this year, you’d know exactly what I’m talking about. While the Australian Open continues without fans due to a national lockdown to prevent the spread of COVID-19 the lack of noise and commotion adds more camera time on the players. You really don’t need to be a tennis fan to be interested in the sport.

The number one seed, Novak Djokovic, looks good. His Lacoste apparel will appeal to those who like the preppy look.

What can I say about Rafael Nadal other than he is amazing?!? Despite being “ancient” by tennis standards at the age of 34 he is ranked second in the world. If he wins the Australian Open he will have 21 Grand Slam Titles to Federer’s 20 Grand Slam Titles.

Dominic Thiem is ranked number three in the world. But I’ve commented more about Dominic Thiem’s ass in 2017 and again in 2020 here than I have about his game. But don’t be decieved by his booty. He has game for days.

The Greek a.k.a. Stefanos Tsitsipas is one of my favorite players on the circuit. The 22 year old is ranked six in the world and is equally exceptional in talent and looks. I first wrote about him last fall here, The handsome Stefanos Tsitsipas.

Tennis pro

If you don’t follow tennis you may not know who Alexander Zverev is, but the 23 year old German is ranked seven in the world. He has yet to win a major but is a threat to anyone on the court.

Be still my beating heart whenever Matteo Berrettini steps on court. The 6’5″ Italian from Rome is the number ten player in the world, and I am smitten. This photo of his abs and see-through shorts, swiped from Kenneth in the 212 pretty much says it all.

I first wrote about Grigor Dimitrov in 2011. He looks like such a baby in this photo, but the Bulgarian is an excellent hard court player. The twenty-first ranked player in the world is so easy on the eyes you might find yourself distracted by his looks but he has game.

Fabio Fognini is another talented Italian who’s fiery personality on and off the court can make him get all sort of attention. Fognini loves attention and he certainly got mine when he posed nude for Cosompolitan Magazine. Let’s see how far this 30-something player can go. I’ll be cheering for him.

I have featured Ross Jirgle in past Furry Fridays, but today, I think this photo of him makes for the perfect at-work distraction. His killer smile and all-American good looks certainly seem tempting to me.
